A Cheesy Jalapeno Tortilla Egg Sandwich.
We almost always have these these corn tortillas in the fridge/freezer so Dave, my roommate, decided to try out an egg with ‘em. It worked out pretty awesomely. I give him credit for the concept, but I took a little different cooking approach and added cheese. Check those tortillas out if you can find them, they are much cheaper, pretty much keep indefinitely and are much tastier as they require you to cook them fresh.
Ingredients
- 2 corn tortillas
- 2 T. fat/oil/butter
- 1 egg
- 1 slice of cheese food or melty stuff
- 3-5 jalapeno slices [pickled]
Directions
Start by crisping up your tortillas with the oil/fat/butter over medium heat. It’s easy enough to burn these guys so be patient. Once they’re about 3/4 to golden-brown gently crack an egg in the large frying pan. If you have to, set aside the tortillas at this point. Cook the egg on one side as you would when making over-easy eggs. After a minute or two, flip the egg and let the other side seal. At this point, take one of the tortillas and lay down your jalapenos, either whole or chopped. Whichever you prefer. Immediately over that place a slice of cheese covering them and most of the tortilla. Around this time the egg should be good to put on top of the cheese. If you want to go wild, add another piece of cheese on top of the egg and then follow up with the other tortilla. This will help to seal the sandwich closed as well as your arteries… but that’s your call. After another 30 seconds or so, the cheese should be melted and carefully flip the sandwich over, finishing the other side of the tortilla.
The egg sandwich would go well with beans and maybe some salsa to dip in. Make two for a solid lunch. If you did the over-easy egg right the yolk should spill out a bit which will really make the whole thing come together. I’m hungry now.
Corn tortillas are also 100x healthier than flour tortillas. And they should ALWAYS be used when making quesadillas.
We’ve done similar, though I prefer to skip the egg and go for some ham chunks. Also, be a man and use habaneros instead of wimpy jalepenos [pickled? come on man].
